- 1 kg mutton ( cut into medium size)
- 1/2 kg potatoes (peeled and cut into 4 pieces)
- 2 large onions (sliced)
- 1 tablespoon garlic (sliced)
- 1 tablespoon ginger (sliced)
- 1 inch cinnamon sticks
- 5 pieces cardamom
- 1 piece star anise
- 2 cups thin coconut milk
- 2 cups thick coconut milk
- 3 medium size tomatoes (sliced)
- 3 tablespoon coriander leaves (chopped)
- 3 tablespoon curry powder (mixed with 1 cup of water)
- 1/3 cup cooking oil
- 1 teaspoon salt
Preparation
Heat the oil in a medium pot and add cinnamon stick, cardamom and star anise. When they start crackling, add ginger, onion and garlic. Fry until light brown and add the curry powder. Cook on a medium heat until all combine to form a dry paste. Add the tomatoes and cooked for 3 minutes. Then add the mutton and mix well. Cooked again on a medium heat until it tender.
Add the potatoes and thick coconut. Cooked again for 10 minutes. Stir well. Add the thin coconut milk and salt. Cooked until boil and garnish with coriander leaves. Cover the pot and after 20 seconds the mutton curry is ready to be served.
